Israeli cuisine fuses the culinary traditions of Jewish communities from across the Middle East, Europe, Africa, and beyond, to create new and imaginative dishes. Film schools, music conservatories, dance companies, and art and design academies are found throughout the country, supporting Israel’s flourishing arts scene. Sabich
Sabich is a popular Israeli street food featuring fried eggplant, eggs, amba, pickles, and a variety of sauces and condiments inside of a pita. It was created in Israel in the 1950s by Jews who had fled oppression and violence in Iraq. They traditionally ate a version of the dish on Shabbat, when no cooking is allowed, and saw an opportunity to turn it into a quick lunch for blue-collar workers in Israel.
